Irish Soda Bread
3 cups flour
½ tsp baking soda
2 tbl white sugar ½ cup raisins
1 egg beaten
1 cup buttermilk
2 tbl butter melted
In medium bowl mix flour, baking powder and sugar
together. Make a well in the middle and
add buttermilk, egg and butter. Stir
until all of the dry ingredients are absorbed.
Mix in raisins. Turn dough out
onto floured surface and knead for a few times just to even out the dough. Handle the dough as little as possible. Pat into a flat circle. Place in a greased cake or pie tin. Bake at 350 for 40-45 minutes or until edges
are golden.
